What Hydration Means

Hydration is the ratio of water to flour, expressed as a percentage. If your recipe calls for 1000g of flour and 700g of water, your hydration is 70%.

This single number has more impact on the final pizza than almost any other variable.

Why It Matters

Lower hydration (50-60%) produces a dough that is easy to roll or stretch thin. The crust bakes crispy and firm, with a dense, cracker-like crumb. This is deliberate — tavern-style and bar pies are designed to be sliced thin and eaten by hand without flopping.

Higher hydration (70-80%) produces a wetter dough that is harder to handle but yields a dramatically different result: large irregular air pockets, a light and airy interior, and a crust that puffs and blisters in the oven. Detroit and Philly styles rely on this.

Working With High-Hydration Dough

High-hydration doughs require different techniques than standard bread doughs:

  • Wet your hands, not the work surface. Oil or water on your hands prevents sticking without adding flour that would change the ratio.
  • Use stretch-and-fold instead of traditional kneading. This builds gluten without overworking the dough.
  • Let time do the work. Longer fermentation develops gluten structure even in very wet doughs. A 24-48 hour cold ferment makes an 80% hydration dough far more manageable than the same dough used on the same day.
  • Do not add extra flour to make it easier to handle. You chose that hydration for a reason. Adding flour at the bench changes the recipe.

Adjusting Hydration

If a recipe’s hydration does not work with your specific flour or environment, adjust by 1-2% at a time. Flour protein content, ambient humidity, and even how old the flour is all affect water absorption. The percentages in these recipes are starting points — your best version may be slightly higher or lower.
