Yeast Is Alive
Yeast is a single-celled fungus that eats sugar and produces carbon dioxide gas and alcohol. The gas inflates your dough. The alcohol contributes to flavor and evaporates during baking. Understanding this simple biology explains almost every decision you make about yeast in pizza dough.
Types of Yeast

All recipes in this collection use Instant Dry Yeast (IDY) because it is the most consistent, easiest to store, and does not require activation.
The Time-Temperature-Quantity Relationship
This is the most important concept in yeast management:
More yeast = faster rise. Higher temperature = faster rise. You can trade one for the other.
A dough with 1.5% IDY at room temperature will be ready in 2-3 hours. A dough with 0.05% IDY needs 24-48 hours in the refrigerator to develop fully. Both produce a properly risen dough, but the slow-fermented version develops significantly more flavor.

Temperature Rules
- Below 40F (4C): Yeast activity is nearly dormant. This is cold fermentation — the dough develops flavor from enzymatic activity without significant rise.
- 65-75F (18-24C): Moderate activity. Good for controlled room-temperature proofing.
- 80-95F (27-35C): Rapid activity. Useful for same-day doughs but reduces flavor complexity.
- Above 120F (49C): Yeast dies. Never add yeast to hot water.
Common Mistakes
- Using too much yeast to speed things up. You get fast rise but bland, yeasty-tasting dough. Reduce yeast and extend fermentation time instead.
- Killing yeast with hot water. If you are dissolving ADY, use water between 95-110F (35-43C). Above 120F destroys the yeast.
- Ignoring room temperature. The same recipe with 0.5% yeast will behave very differently in a 65F kitchen versus an 85F kitchen. Adjust time or yeast accordingly.
- Skipping the scale for small amounts. At 0.3% IDY in a 500g dough, you need 0.79g of yeast. You cannot eyeball this. A precision scale (0.01g resolution) is essential for low-yeast recipes.
