- Mix on low to disperse.
- Add remaining 1,000g flour and mix on Speed 1 for 3 minutes until shaggy.
- Add 30g kosher salt.
- Increase to Speed 2 and slowly drizzle in 36g extra virgin olive oil in a steady stream.
- Mix for approximately 10 minutes until gluten is fully developed, glossy, and passes the translucent windowpane test.
Phase 3: Fermentation & Temperature
Ambient bulk rise, portioning, cold proof & room temper
- Cover and bulk ferment at room temperature for 3 hours.
- Divide into 273g portions.
- Round tightly on an un-floured wooden bench to seal bottom seams.
- Transfer to oiled containers and cold ferment in the refrigerator for 24 hours.
- Remove dough 3 hours before baking to reach 62°F–66°F.
- Dredge in semolina rimacinata.
- Using finger pads, gently push all internal air outward from the center into the outer perimeter, creating an exaggerated, puffy 1.5-inch cornicione rim without deflating it.
Phase 4: Shaping & Assembly
Bench dredge, hand stretch or pan press & topping layering
- Ladle crushed San Marzano tomatoes strictly in the center, keeping the outer 1.5 inches completely bare.
- Disperse fior di latte or buffalo mozzarella, and drizzle high-polyphenol Extra Virgin Olive Oil.
Phase 5: Oven Launch & Finishing
High-heat baking surface, broiler assist, de-pan & wire rack rest
- Launch onto a 650°F–800°F outdoor pizza oven floor (such as an Ooni or Gozney) or a 550°F preheated baking steel in a home oven with broiler assist.
- Bake for 2 to 3 minutes in an outdoor oven (or 4 to 5 minutes at 550°F on steel).
- The trapped gas pockets will violently expand, puffing into an enormous, crisp, hollow honeycomb 'canotto' rim.
- Finish with fresh basil and Parmigiano.
