Dough Prep & Fermentation Instructions

  1. 1. Mix & Knead

    Mix the flour, water, yeast, salt, oil, and malt. Knead for 8-10 minutes until smooth and elastic.

  2. 2. Bulk Fermentation

    Place the dough in a lightly oiled container, cover, and let ferment for 2 hours at room temperature.

  3. 3. Dimple into Pan

    Generously oil your baking pan (preferably blue steel or anodized aluminum) with olive oil. Press the dough flat. Let it rest for 15-20 minutes, then press again into the corners to cover the entire pan.

  4. 4. Final Proof

    Cover the pan and let the dough proof for 4-6 hours at room temperature until thick, bubbly, and puffy.

Topping & Prep Instructions

  1. 1. Cheese Crown Prep

    Shred or cube cheese (ideally Brick cheese or low-moisture mozzarella). Spread cheese evenly over the dough, ensuring a generous border is pressed directly against the pan walls to create the crispy cheese crown.

  2. 2. Stripes of Sauce

    Spoon your pizza sauce in two or three thick, parallel racing stripes over the top of the cheese.

Baking & Serving Instructions

  1. 1. Preheat Oven

    Preheat oven to 500°F (or maximum temp) with a baking steel or stone on the bottom rack for 45-60 minutes.

  2. 2. Bake Pan

    Place the pan directly on the preheated steel. Bake for 12-15 minutes until the bottom is crispy and cheese is bubbling and caramelized.

  3. 3. Depan & Serve

    Run an offset spatula or scraper around the pan edges to release the crispy cheese crust. Carefully slide the pizza out of the pan onto a cooling rack. Let rest 2 minutes before slicing.
